Delicious foil packets filled with shrimp, sausage, corn, and potatoes for an easy and flavorful grilled seafood boil.
Ingredients:
  • heavy duty aluminum foil
  • 1.5 pounds large shrimp, peeled and deveined
  • 1 pound baby potatoes, halved
  • 1 (12 ounce) package andouille sausage, sliced
  • 2 ears corn, cut crosswise into 4 pieces
  • 2 tablespoons olive oil, divided
  • 1.5 tablespoons butter, cut into 4 pats, or to taste
  • 4 teaspoons seafood seasoning (such as Old Bay®)
  • 4 teaspoons minced fresh garlic
  • kosher salt and ground black pepper to taste
  • 1 lemon, cut into wedges
  • 2 tablespoons chopped parsley leaves
Instructions:
  • Cut four 12-inch sheets of aluminum foil, then evenly distribute the mixture of shrimp, potatoes, sausage, and corn onto the center of each sheet of foil.
  • Prepare the foil packets by folding up the sides. In each packet, drizzle 1/2 tablespoon of olive oil and add 1 pat of butter, 1 teaspoon of seafood seasoning, 1 teaspoon of garlic, and a sprinkle of salt and pepper. Squeeze in 1 lemon wedge, then gently toss everything together. Seal the packets by folding over the foil completely.
  • Preheat your grill on high, oil the grate lightly, then grill the packets until the shrimp is opaque and veggies are tender, roughly 15 minutes. Finish by garnishing with parsley.
