Shrimp Cocktail Tostadas

Grilled shrimp tostadas: A tasty fusion of shrimp cocktail and tostadas, perfect for a quick and delicious summer meal.
Ingredients:
  • 12 uncooked large shrimp
  • 1 lemon (or lime), halved
  • 1 teaspoon grated lemon (or lime) peel
  • 2 tablespoons canola oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 cup plus 1 tablespoon chopped fresh cilantro
  • 1/4 cup chopped red onion
  • 1/4 cup cocktail sauce
  • 1/4 cup salsa
  • 4 tostada shells
  • Queso fresco, avocado, lemon or lime wedges, if desired
Instructions:
  • Put the shrimp in a resealable plastic bag and squeeze in the juice of half a lemon. Add lemon peel, canola oil, cumin, garlic powder, salt, pepper, and 1 tablespoon of cilantro. Seal the bag and gently mix to coat the shrimp. Marinate in the refrigerator on a plate for at least 10 minutes, but no longer than 20 minutes.
  • Preheat grill to medium-high. Combine 1/4 cup cilantro and onion in a small bowl. In a separate bowl, mix cocktail sauce, salsa, and juice of the remaining lemon. Stir in half of the cilantro mixture. Set aside.
  • Grill the shrimp until pink and opaque, about 2 minutes per side. Transfer shrimp to a bowl and let cool. If desired, remove tails and chop shrimp into bite-size pieces. Mix chopped shrimp with cocktail sauce and coat well. Serve on tostada shells, and garnish with cilantro and your favorite toppings.
