Try this refreshing Shrimp and Tomato Couscous Salad with tangy feta and garlic dressing for a crowd-pleasing twist on a classic dish.
Ingredients:
  • 2 cups couscous
  • 2 cups water
  • 0.75 cup olive oil
  • 0.25 cup apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon ground cumin
  • 1 clove garlic, crushed
  • salt and pepper to taste
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1.5 pounds cooked shrimp, peeled and deveined
  • 2 medium tomatoes, chopped
  • 1 cup chopped fresh parsley
  • 1 cup crumbled feta cheese
Instructions:
  • 1. Boil water in a saucepan, then add couscous. Cover, remove from heat, and let sit for 5 minutes. Fluff with a fork to prevent clumping. Allow it to cool.
  • Whisk olive oil, cider vinegar, Dijon mustard, garlic, salt, and pepper in a small bowl. Set aside.
  • Combine shrimp, couscous, bell peppers, tomatoes, parsley, and feta cheese in a large salad bowl. Mix vinaigrette well, then drizzle about half over the couscous. Toss gently until coated, then add more dressing to completely cover without oversaturating. Chill in the fridge for a minimum of 2 hours before enjoying.
