Ingredients:
  • 8 ounces small raw shrimp, shelled and deveined
  • 1/2 teaspoon kosher salt
  • freshly ground black pepper
  • 1/2 teaspoon cornstarch
  • 3 tablespoons peanut oil, canola oil, or rice bran oil
  • 3 eggs, beaten
  • 2 stalks green onion, minced
  • 4 cups leftover rice, grains separated well
  • 3/4 cup frozen peas and carrots, defrosted
  • 1 tablespoon soy sauce (use gluten-free soy sauce if you are making a gluten-free version), plus more to taste
  • 1 teaspoon dark toasted sesame oil
Instructions:
  • Season the shrimp with salt, pepper, and cornstarch: In a bowl, coat the shrimp with the mixture and let it rest at room temperature for 10 minutes.
  • Preheat a large sauté pan or wok on high heat until very hot. Add one tablespoon of cooking oil and swirl to coat the pan when a drop of water sizzles on contact.
  • Place shrimp in a hot pan in a single layer. Cook undisturbed for 30 seconds on each side until mostly cooked through. Transfer shrimp to a bowl using a slotted spoon.
  • Cook the beaten eggs on medium heat until slightly runny: Return the pan to medium heat and add more oil if needed. Quickly scramble the eggs until they are almost cooked but still a bit runny. Transfer to the bowl with the cooked shrimp.
  • Sauté the green onions in hot oil for 15 seconds, then stir in the cooked rice. Spread the mixture evenly in the pan and let it fry without moving for 1-2 minutes until you hear a sizzle. Turn the rice with a spatula, spread it again, and cook for another minute.
  • Sprinkle soy sauce over the rice and mix well. Then add carrots, peas, shrimp, eggs, and sesame oil, stirring until everything is combined. Heat until sizzling hot and adjust seasoning with more soy sauce if desired. Share your feedback by rating and reviewing the recipe!
