Indulge in homemade Shrimp Fried Rice in just 30 minutes, beating takeout any day.
Ingredients:
  • 1 tablespoon sesame oil
  • 2 eggs, slightly beaten
  • 1 tablespoon olive oil
  • 2 cups chopped fresh or frozen (thawed) broccoli
  • 1 cup chopped carrots
  • 1 cup fresh or frozen (thawed) snow pea pods
  • 2 cups cold cooked white rice
  • 3 tablespoons soy sauce
  • 1 lb uncooked medium shrimp, peeled (tail shells removed), deveined
  • 1 cup chopped green onions
Instructions:
  • Heat sesame oil in a wok or large skillet over medium heat. Cook and stir eggs in the oil until thickened but still moist. Transfer eggs to a plate and cover to keep warm.
  • Heat olive oil in the skillet over medium-high heat. Stir-fry broccoli, carrots, and pea pods until crisp-tender. Reduce heat to medium, then add rice, garlic, gingerroot, soy sauce, and shrimp. Cook for 5 to 7 minutes, stirring frequently, until rice is hot and shrimp are pink.
  • Add in fluffy scrambled eggs and fresh green onions, allowing them to mingle for an additional minute. Serve promptly for optimal enjoyment.
