Flavorful Cajun shrimp gumbo with okra, ideal for entertaining or a cozy meal.
Ingredients:
  • 1.5 pounds uncooked medium shrimp
  • 1 tablespoon Cajun seasoning, divided, or to taste
  • 3 quarts water
  • 1 medium onion, diced, divided
  • 1 large green bell pepper, diced, divided
  • 0.5 cup butter
  • 0.5 cup all-purpose flour
  • 1 tablespoon tomato paste, or more to taste
  • 2 (14.5 ounce) cans diced tomatoes with green pepper and onion
  • 1 pound okra, cut into 1/4-inch pieces
  • 0.125 teaspoon Cajun-style crab boil seasoning, or to taste
Instructions:
  • Peel shrimp and coat shells with a zesty Cajun seasoning. Combine seasoned shells with water, diced onion, and diced bell pepper in a pot. Bring to a boil, then simmer covered for at least 2 hours to develop a rich stock.
  • Prepare the shrimp by gently cutting along the back to devein them, ensuring they cook perfectly. Season the shrimp with Cajun seasoning and refrigerate.
  • In a large pot over medium-high heat, melt butter. Gradually whisk in flour continuously until fully incorporated. Stir occasionally until the roux becomes golden brown and develops a nutty smell, around 5 minutes. Add the rest of the onion and bell pepper, saute with the roux until the onion becomes translucent, for about 5 to 7 minutes. Mix in the tomato paste.
  • Gradually incorporate tomatoes, okra, and shrimp stock, then sprinkle in crab boil seasoning. Bring to a boil, lower heat, and simmer uncovered, stirring occasionally, for about 1 hour. Finally, add shrimp and cook until they turn bright pink and tender, approximately 20 minutes.
