Delicious one-pot meal combines fluffy quinoa with succulent shrimp, fresh asparagus, red bell pepper, and hearty mushrooms.
Ingredients:
  • 1 cup uncooked quinoa, rinsed
  • 1.5 cups chicken broth
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 8 spears fresh asparagus, trimmed and cut into 1 inch pieces
  • 1 cup sliced fresh mushrooms
  • 0.25 cup raisins
  • 1 tablespoon minced fresh ginger root
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 tablespoon lemon juice
  • salt and pepper to taste
Instructions:
  • In a saucepan, bring quinoa and chicken broth to a boil. Cover, reduce heat to low, and simmer for about 15 minutes until quinoa is tender. Remove from heat and let quinoa absorb remaining liquid.
  • Heat olive oil in a large skillet over medium heat. Sauté garlic, onion, and red bell pepper until onion is translucent, about 5 minutes. Add asparagus, mushrooms, raisins, and ginger; cook until asparagus is tender. Add shrimp and cook until pink and no longer translucent in the center.
  • Blend the zesty lemon juice with the fluffy quinoa and combine with the succulent shrimp and fresh veggies. Season with salt and pepper to elevate the flavors before presentation.
