Shrimp and Quinoa

Versatile shrimp, quinoa, and veggie dish, perfect hot or cold.
Ingredients:
  • 1.5 cups water
  • 1 cup uncooked quinoa
  • 1 red onion, chopped
  • 0.5 green bell pepper, chopped
  • 0.5 cup sliced fresh mushrooms
  • 6 fresh asparagus spears, trimmed and chopped
  • 0.25 cup golden raisins
  • 1 tablespoon minced fresh ginger root
  • 1 pound medium shrimp - peeled and deveined
  • 1 lime, juiced
  • 0.5 cup chopped Italian flat leaf parsley
Instructions:
  • Bring water to a boil in a large pot, then stir in the quinoa. Cover, simmer on low for 15 minutes. Remove from heat, set aside for 10 minutes until liquid is absorbed.
  • Heat the olive oil in a skillet over medium heat, saute onion and green pepper until tender. Add mushrooms, asparagus, raisins, and ginger, cook until asparagus is tender. Season with salt and pepper, add shrimp, cook until opaque.
  • Combine quinoa with lime juice and remaining olive oil in a large bowl. Mix in the skillet mixture and parsley before serving.
