Fresh and simple shrimp and vegetable spring rolls, perfect for snacking or light meals. Delicious with peanut dipping sauce!
Ingredients:
  • For the spring rolls:
  • 13 to 15 large (10-inch) rice paper wrappers
  • 2 large carrots, peeled and sliced into matchsticks
  • 2 medium red bell peppers, seeded and sliced into ¼-inch strips
  • 2 Persian cucumbers, sliced into matchsticks (or use half of an English cucumber)
  • Fresh basil leaves
  • Fresh mint leaves
  • 1 pound (450g) 31/40-count cooked shrimp
  • Sweet chili sauce , optional for extra flavor
  • For the peanut sauce:
  • 1/2 cup creamy unsalted peanut butter
  • 2 tablespoons low-sodium tamari or soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey (sugar or maple syrup works too)
  • Juice from 1/2 lime (about 1 to 1 ½ tablespoons)
  • 5 tablespoons filtered water
  • 1/4 teaspoon salt
Instructions:
  • Set up your workspace: Pour lukewarm water into a wide, shallow bowl and lightly dampen a cutting board to prevent sticking. Organize all ingredients in bowls within reach. Coat a serving platter with a thin layer of sesame oil to prevent sticking.
  • Soften the rice paper wrapper by dipping it in water and swirling until evenly moistened (20 to 40 seconds). It should feel soft and flexible. If it rips, discard and use a fresh wrapper.
  • Place the softened rice paper on the wet board. Create a row of carrots, cucumbers, peppers, basil, and mint leaves about 1 inch from the bottom edge of the wrapper. Position 3 shrimp pieces about 1 1/2 inches above the vegetables. Optional: Add a drizzle of peanut sauce or sweet chili sauce for extra flavor.
  • Wrap the spring rolls: Fold the bottom of the rice paper over the vegetables, roll towards the shrimp. Once you reach the shrimp, fold the left and right sides toward the center. Continue rolling to the top to form a roll. Place on a platter and repeat with remaining rolls.
  • Prepare the peanut dipping sauce by combining peanut butter, tamari, rice vinegar, honey, lime juice, water, and salt. Adjust the seasonings to your liking. Transfer the sauce to a small bowl and serve alongside the spring rolls on the platter.
  • To enjoy these delicious spring rolls at their best, serve them on the same day they are prepared. If not serving right away, simply cover the platter with a moist cloth and keep chilled until serving time.
