Sichuan Eggplant Linguine

Spicy Sichuan pasta ready in 25 minutes for a delicious dinner.
Ingredients:
  • 4 ounces uncooked linguine
  • 1 teaspoon vegetable oil
  • 1 medium Japanese eggplant, chopped (about 1 1/2 cups)
  • 3/4 cup chunky garlic and onion spaghetti sauce
  • 1 to 2 teaspoons Sichuan (Szechuan) hot and spicy sauce or Chinese chili sauce
  • 1/2 teaspoon freshly grated gingerroot, if desired
Instructions:
  • Prepare the linguine according to package instructions.
  • As linguine cooks, warm oil in a small saucepan over medium-high heat. Sauté eggplant in the fragrant oil, then add spaghetti and Sichuan sauces. Simmer on medium heat for 2 minutes, stirring occasionally until everything is heated through.
  • After cooking the linguine, gently combine it with the flavorful eggplant sauce, then finish it off with a sprinkle of fresh gingerroot for a burst of aromatic flavor.
