Spicy fried eggplant with sesame & chilli

Experience the fiery flavors of Sichuan cuisine with this must-try dish for your next home banquet.
Ingredients:
  • 30.00 ml malt vinegar
  • 30.00 ml sesame oil
  • 24.00 gm brown sugar
  • 31.50 gm soy sauce
  • 31.20 gm hot chilli sauce
  • Peanut oil, to shallow-fry
  • 1 large eggplant, quartered lengthways, thinly sliced
  • 12.00 gm sesame seeds, toasted
  • Thinly sliced fresh green chilli, to serve
Instructions:
  • Combine vinegar, sesame oil, sugar, soy sauce, and chili sauce in a small bowl, stirring until the sugar dissolves.
  • In a large deep frying pan, pour enough peanut oil to come 2cm up the side. Heat on high. Fry one-third of the eggplant slices for 2 minutes on each side until golden. Place on a plate lined with paper towel. Repeat this process for the rest of the eggplant slices in two more batches, making sure to reheat the oil between batches.
  • Place the eggplant elegantly on a serving plate. Generously drizzle the dressing over it and sprinkle with sesame seeds and chili for a delightful touch.
