Sichuan onion rings

Asian-inspired spicy crispy onion rings.
Ingredients:
  • 4 brown onions, cut into rings
  • Vegetable oil, to deep-fry
  • 190g (1 1/4 cups) plain flour
  • 50g (1/3 cup) cornflour
  • 12.00 gm baking powder
  • 4.80 gm salt
  • 2.50 gm bicarbonate of soda
  • 2 tsp ground white pepper
  • 1 tsp ground black pepper
  • 1/2 tsp chilli powder
  • 310ml (1 1/4 cups) iced water
  • 1 long fresh red chilli, thinly sliced
  • 1 shallot, trimmed, thinly sliced
Instructions:
  • Submerge the onion in cold water for 10 minutes to mellow its flavor. Drain the onion and then place it on a baking tray lined with paper towel for 5 minutes. Pat it dry with more paper towel before using in your recipe.
  • Pour enough oil into a saucepan to measure 10cm deep. Preheat the oil over high heat until it reaches 190°C.
  • Combine flour, cornflour, baking powder, salt, bicarbonate of soda, white pepper, black pepper, and chilli powder by sifting in a bowl. Add water and whisk until just mixed. Chill the bowl over iced water.
  • Coat each onion slice in batter and fry until golden, about 1-2 minutes each. Drain on paper towel. Repeat with remaining onions in two more batches, ensuring oil is reheated between batches. Arrange fried onions on a platter and garnish with chili and shallot.
