Sichuan-style stir-fried long beans with spicy red chilis and sesame oil, ready in just 15 minutes!
Ingredients:
  • 1/2 pound Chinese long beans, trimmed and cut into 3 inch segments
  • 1 tablespoon peanut oil
  • 4 to 6 dried chilies, preferably Sichuanese, roughly chopped
  • 1 teaspoon whole Sichuan peppercorns , lightly crushed
  • 1/4 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon roasted sesame oil
  • Splash soy sauce
Instructions:
  • Heat a tablespoon of peanut oil in a wok or large sauté pan over medium heat. Once hot, add the chilies and peppers and stir-fry until fragrant.
  • Toss in the long beans, salt, and sugar: Stir-fry the long beans briskly for 3 to 4 minutes, ensuring the spices do not burn (adjust the heat if needed). Sprinkle in the salt and sugar, stir-fry briefly to combine everything well.
  • Drizzle in the fragrant sesame oil and savory soy sauce off the heat. Serve promptly.
