Sicilian-style anchovy pasta: Spaghetti in garlicky oil with anchovies, topped with crispy bread crumbs, parsley, and Parmesan.
Ingredients:
  • 1 pound spaghetti
  • 4 tablespoons olive oil
  • 1 (2 ounce) can anchovy fillets, chopped
  • 3 cloves garlic, crushed
  • 1 cup fine bread crumbs
  • 1 cup chopped fresh parsley
  • ground black pepper to taste
  • 4 tablespoons freshly grated Parmesan cheese
Instructions:
  • 1. Boil a pot of generously salted water until it shimmers. Add pasta and cook for 8 to 10 minutes until perfectly al dente; drain well.
  • Heat olive oil in a skillet over medium heat. Cook anchovies and garlic, stirring constantly until anchovies sizzle and garlic is fragrant, for about 2 minutes.
  • Add the bread crumbs, switch off the heat, then mix in the fresh parsley and black pepper.
  • Coat hot pasta in anchovy sauce, top with Parmesan cheese, and serve.
