Indulge in BBQ herb chicken with cheesy garlic bread on a sunny day.
Ingredients:
  • 9.60 gm sea salt
  • 20.00 ml fennel seeds
  • 2 tsp dried chilli flakes
  • 82.50 ml fresh oregano leaves
  • 1 garlic clove, chopped
  • 82.50 ml chopped fresh flat-leaf parsley leaves
  • 36.40 gm olive oil
  • 1 tsp finely grated lemon rind
  • 65.63 gm lemon juice
  • 1kg chicken thigh
  • Lemon wedges, to serve
  • 700g loaf (32cm long) crusty bread
  • 175g butter, softened
  • 125.00 ml grated tasty cheese
  • 125.00 ml finely grated parmesan
  • 3 garlic cloves, crushed
  • 20.00 ml finely chopped fresh flat-leaf parsley leaves
Instructions:
  • In a mortar and pestle, crush sea salt, fennel, chili, oregano, and garlic until combined. Mix in parsley and continue pounding gently. Stir in oil until a coarse paste forms. Transfer the mixture to a large glass or ceramic dish and fold in lemon zest.
  • Add the chicken and mix well until coated. Cover and let it marinate in the refrigerator for 1 hour.
  • Prepare Cheesy Garlic Bread: Slice the bread into 1.5cm thick slices without cutting it all the way through. Mix butter, tasty cheese, parmesan, garlic, and parsley in a bowl. Spread the flavorful butter mixture on both sides of the bread slices. Finally, wrap the loaf in foil.
  • Preheat barbecue plate on high, then reduce to medium heat. Cook chicken on chargrill for 5-6 minutes per side until beautifully browned and thoroughly cooked.
  • Grill the bread on the barbecue plate, flipping every 5 minutes, for 25 to 30 minutes until the butter and cheese have melted. Serve the chicken with the grilled bread and lemon wedges.
