Savory oregano-garlic beef rolled with ham and gooey mozzarella, then baked to perfection.
Ingredients:
  • 2 eggs, beaten
  • 0.5 cup tomato juice
  • 0.75 cup soft bread crumbs
  • 2 tablespoons snipped fresh parsley
  • 0.5 teaspoon dried oregano, crushed
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon ground black pepper
  • 2 pounds lean ground beef
  • 1 (6 ounce) package thinly sliced ham
  • 1 (6 ounce) package sliced mozzarella cheese
Instructions:
  • In a large bowl, mix together eggs and tomato juice, then add bread crumbs, parsley, oregano, salt, pepper, garlic, and ground beef. Ensure all ingredients are well combined. Preheat oven to 350°F (175°C).
  • Place the meat onto a piece of foil or waxed paper and gently shape it into a 10x8 inch rectangle. Lay the ham slices on top of the meat, making sure to leave a small border around the edges. Tear up the cheese slices, keeping one slice intact, and scatter them over the ham.
  • Gently roll up the meat from the short end using the foil or waxed paper to help. Seal the edges and ends securely. Then, place the roll seam side down in a 9x13 inch baking dish.
  • Bake the loaf in a preheated oven for 75 minutes. Cut the slice of cheese into 4 triangles and arrange on top of the loaf. Bake for an additional 2 minutes until the cheese melts.
