Try flavorful Sicilian sausage rolls made with pizza dough, Italian sausage, and creamy ricotta. Simple and satisfying using premade dough.
Ingredients:
  • 24 ounces ready-to-use pizza dough
  • 1 large egg, beaten
  • 2 cups ricotta cheese
  • 12 ounces Italian sausage, casing removed
  • 1 teaspoon freshly ground black pepper
  • red chili flakes to taste
  • salt to taste (optional)
  • 1/2 cup thinly sliced green onions
  • 1/2 cup grated pecorino Romano cheese, or more to taste
Instructions:
  • Heat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the dough into a 12x18-inch rectangle. Brush the entire surface of the dough with half of the beaten egg.
  • Spread a row of rounded tablespoons of ricotta about 3 inches from the top edge of the long side of the dough. Leave 1 1/2 inches of space between each scoop. Create a second row below the first, offsetting the ricotta scoops to form a checkerboard pattern. Continue this pattern until you reach the bottom of the dough, using all the ricotta.
  • Place rounded tablespoons of sausage in alternating spaces between ricotta scoops to create a visually appealing pattern.
  • Sprinkle with black pepper, red chili flakes, and salt, considering the saltiness of the sausage. Top with green onions and evenly grate pecorino Romano cheese.
  • Roll the dough tightly from the bottom towards the edge, leaving 3 inches of unfilled dough. Make sure to finish with the seam side down.
  • Divide into 12 equal portions and arrange on the baking sheet with the cut side facing up. Brush the top of each sausage roll with the remaining egg and sprinkle more pecorino Romano cheese on top, if desired.
  • Bake in the oven until beautifully golden, for 45 to 50 minutes.
