Cheesy chicken and broccoli noodle casserole topped with a creamy white sauce, perfect for potlucks or gatherings.
Ingredients:
  • 6 ounces egg noodles
  • 3 tablespoons butter
  • 1 yellow onion, chopped
  • 0.25 cup all-purpose flour
  • 1.5 cups chicken broth
  • salt and pepper to taste
  • 5 cups cooked, shredded chicken breast meat
  • 1 (10 ounce) package chopped frozen broccoli, thawed
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded provolone cheese
Instructions:
  • Boil a large pot of lightly salted water. Cook the pasta until al dente (6 to 8 minutes), then drain. Preheat the oven to 400°F (200°C) and grease a 9x13 inch casserole dish.
  • In a large saucepan over medium heat, melt butter. Saute onion until tender, about 3 minutes. Mix in flour, then gradually stir in chicken broth. Slowly add milk while stirring, cooking until the sauce thickens. Season with salt and pepper to taste.
  • Spread cooked noodles in the casserole dish, layer with cooked chicken evenly, add broccoli on top of the chicken, pour sauce evenly over the broccoli, then sprinkle half of the cheese mixture over the casserole.
  • Bake in a hot oven for 20 minutes, or until the cheese is melted. Sprinkle with the rest of the cheese and let it sit for 5 minutes until fully melted.
