Simplistic, bean-free chili with rich flavors. Add spices at the end for optimal taste preservation.
Ingredients:
  • 1.5 pounds beef stew meat, cut into 1/2-inch pieces
  • 1 (14.5 ounce) can fire-roasted diced tomatoes, undrained
  • 1 (6 ounce) can tomato paste
  • 1 cup water
  • 0.25 cup chili powder
  • 1 teaspoon chipotle chile powder
  • 1 teaspoon garlic salt
  • 1 teaspoon adobo seasoning (such as Savory Spice® Lodo Red Adobo)
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon onion powder
Instructions:
  • In a multi-functional pressure cooker (like Instant Pot), mix beef and diced tomatoes. Seal the lid, choose high pressure setting, and set timer for 10 minutes. Let the pressure build for 10 to 15 minutes.
  • Uncover and switch to saute mode. Reduce liquid for about 5 minutes. Stir in tomato paste, water, spices, and seasonings. Mix well and serve hot.
