Instant Pot beef tips and noodles: Easy, quick weeknight meal for pressure cooker beginners. Also slow cooker friendly.
Ingredients:
  • 1 pound cubed beef stew meat
  • 2 cloves garlic, minced
  • 1 (8 ounce) package sliced button mushrooms
  • 1 (32 ounce) carton beef stock
  • salt to taste
  • ground black pepper to taste
  • 1 (8 ounce) package wide egg noodles
  • 3 tablespoons cornstarch
  • 0.5 cup cold water
Instructions:
  • In a pressure cooker over medium-high heat, heat oil and add beef cubes. Sear until all sides are golden brown. Remove beef and set aside. Discard any extra grease.
  • Reduce heat to medium and add onion. Sauté until softened and translucent, around 5 minutes. Add garlic and mushrooms, continue cooking until garlic is fragrant but not browned, for another 5 minutes.
  • Add the beef stock, beef cubes, and any drippings into the pot; season generously with salt and pepper. Increase the heat to high, cover with the lid tightly, and bring to full pressure.
  • Lower the heat to a gentle simmer while keeping the pressure steady, and allow to cook for 20 minutes.
  • While the stew simmers, boil a large pot of lightly salted water. Add noodles and cook for about 8 minutes, stirring occasionally, until tender. Drain and set aside.
  • Take the pressure cooker off the heat and let the pressure release naturally. Mix 1/2 cup of cold water with cornstarch. Once the pressure has subsided, uncover and stir in the cornstarch mixture.
  • Bring the beef and mushrooms to a vigorous boil, stirring constantly until the sauce thickens, which should take about 2 minutes. Pour the flavorful beef over the noodles and serve immediately.
