Chef John's hearty pot roast recipe: Soft vegetables meld with meat juices for a delicious sauce.
Ingredients:
  • 1 tablespoon vegetable oil
  • 3.5 pounds beef chuck pot roast
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 0.25 cup butter
  • 1 teaspoon dried rosemary
Instructions:
  • Preheat the oven to a gentle 275°F (135°C).
  • In a large oven-safe pot over medium-high heat, heat vegetable oil. Season chuck roast with salt and black pepper, then brown on both sides in the hot oil; transfer to a plate.
  • Place carrots, celery, and onion into the pot. Sauté until vegetables release their juices, scraping any brown bits off the bottom, for about 3 minutes. Incorporate butter and cook until onions are translucent, around 5 minutes. Sprinkle in rosemary, then return the roast to the pot and cover.
  • Roast the chuck roast in the preheated oven until tender, about 2 1/2 to 3 hours. Season vegetables to taste with more salt and black pepper.
