Elevate classic banana muffins with tropical flavors of pineapple, coconut, and rum for irresistible pina colada muffins.
Ingredients:
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 3 bananas, mashed
  • 0.75 cup white sugar
  • 0.33333334326744 cup butter, melted
  • 1 egg, beaten
  • 1 tablespoon rum-flavored extract
  • 1 teaspoon vanilla extract
  • 0.5 (20 ounce) can pineapple chunks, drained
  • 0.75 cup shredded unsweetened coconut, divided
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin by greasing it or lining with paper liners.
  • Combine the flour, baking soda, baking powder, and salt by sifting them together in a bowl.
  • Combine bananas, sugar, butter, egg, rum-flavored extract, and vanilla extract in a bowl. Gradually fold in flour mixture. Gently mix in pineapple chunks and 1/2 cup coconut. Divide batter into muffin cups, sprinkle each with 1 teaspoon shredded coconut, and bake.
  • Bake in the preheated oven for 25-30 minutes until golden brown and a toothpick inserted into the center of a muffin comes out clean. Then, let them cool in the pan for 10 minutes before transferring to a wire rack.
