Simplify with this classic Quiche Lorraine: eggs, bacon, onion, Swiss cheese in a pre-made crust - perfect for any meal!
Ingredients:
  • 1 (9 inch) refrigerated pie pastry
  • 6 slices bacon
  • 1 medium onion, sliced
  • 1.5 cups shredded Swiss cheese
  • 1.5 cups milk
  • 3 large eggs, beaten
  • 0.25 teaspoon salt
Instructions:
  • Ensure your oven is a toasty 450 degrees F (230 degrees C).
  • Fit pie pastry snugly into a 9-inch pie pan, then cover with a double layer of aluminum foil and fill with pie weights or dried beans.
  • Bake in the preheated oven until the edges turn golden, about 8 minutes. Remove foil and weights, then bake until the crust is firm and dry, about 5 minutes. Take out of the oven and lower the temperature to 325 degrees F (165 degrees C).
  • Cook bacon in a large skillet over medium-high heat until crispy, about 10 minutes. Then transfer the cooked bacon to a paper towel-lined plate to cool, crumble it when ready. Reserve 2 tablespoons of the drippings in the skillet.
  • Add the onion to the flavorful drippings in the skillet and sauté over medium heat until beautifully tender, approximately 5 minutes. Use a slotted spoon to transfer the onion to a waiting bowl.
  • Combine Swiss cheese and flour in a small bowl. In a large bowl, whisk together milk, eggs, and salt, then fold in bacon and onion. Gently blend in the cheese mixture until incorporated, then pour into the pie crust.
  • Bake in the preheated oven for 35 to 40 minutes until a knife inserted into the center comes out clean. If needed, protect the crust edge with foil to avoid burning. Allow to rest for 10 minutes before serving.
