Ingredients:
  • 350g fresh Singapore noodles
  • 18.20 gm peanut oil
  • 500g lamb loin, thinly sliced diagonally
  • 1 red onion, cut into thin wedges
  • 125g snow peas, sliced diagonally
  • 89.10 gm hoisin sauce
  • 187.50 ml roasted salted cashew nuts
Instructions:
  • Prepare noodles according to the instructions on the packaging.
  • Preheat a wok over high heat until sizzling hot. Add 1 teaspoon of oil and swirl to coat the pan. Add one-third of the lamb and stir-fry for 1 minute until golden brown. Transfer to a plate. Repeat twice with the remaining oil and lamb.
  • In a hot wok, add the last teaspoon of oil along with the onion and cook for a minute. Toss in the snow peas and stir-fry for another minute. Add back the lamb, hoisin sauce, noodles, and cashew nuts. Stir-fry for one more minute until everything is well combined and heated through. Serve and enjoy!
