Skateboard cake topped with chocolate doughnuts and pretzel rods - customizable and perfect for birthdays!
Ingredients:
  • 2 boxes yellow cake mix with pudding
  • Water, oil and eggs called for on cake mix box
  • 3 containers fluffy white whipped ready-to-spread frosting
  • Yellow, neon blue and neon green gel food color
  • 4 chocolate doughnuts
  • 2 pretzel rods
  • Fruit-flavored snack rolls, if desired
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans). Grease the bottom of a 13x9-inch pan generously. Grease the bottom of a 9-inch round pan generously. Line 12 regular-size muffin cups with paper baking cups.
  • Prepare each cake mix according to the box instructions using water, oil, and eggs. Transfer one batter into the 13x9-inch pan, pour half of the second batter into the round pan, and divide the rest evenly among 12 muffin cups. Bake according to box instructions. Let cool in pans for 10 minutes, then transfer to cooling racks and cool completely for about 1 hour. Use the cakes for the skateboard and wrap and store the cupcakes for later use.
  • Slice the round cake in half vertically to create two half circles. Transfer the 13x9-inch cake onto a large cake platter or board. Frost the short ends of the cake. Position the round cake halves on each short side of the 13x9-inch cake to form a skateboard shape. Coat the entire cake thinly with 1 cup of frosting to seal in crumbs. Chill the cake in the refrigerator for 30 minutes to allow the frosting to set.
  • 1. Combine 2 cups of remaining frosting with neon green food color in a medium bowl until you achieve the desired color. Frost the entire cake with the green frosting. 2. Mix the remaining frosting with blue food color in a small bowl until you achieve the desired color. Create stripes with the blue frosting. 3. Use fruit roll candy to cut shapes resembling flames as depicted in the photo. 4. Trim the bottoms of the doughnuts to sit flush with the cake and place them on top of the skateboard to mimic wheels. 5. Insert a pretzel rod between the doughnuts.
