Prepare sweet dough for fun kids' party cookies!
Ingredients:
  • 125g butter, softened
  • 2.20 gm vanilla extract
  • 375.00 ml plain flour
  • 32.50 gm cocoa powder
  • Blue food colouring
  • Green food colouring
  • Yellow food colouring
  • 65cm licorice strap
  • 4 x 34g packets five flavours Life Savers lollies
  • 1 eggwhite, lightly whisked
  • 225.00 gm pure icing sugar, sifted
Instructions:
  • With an electric mixer, whip together butter, sugar, and vanilla until they are light and fluffy, which should take about 5 minutes. Next, add the egg and continue to beat until well combined.
  • Sift together flour and cocoa powder over the butter mixture, then stir with a wooden spoon until combined. Divide the dough in half and shape each half into a disc. Wrap them in plastic wrap and chill in the refrigerator for 15 minutes.
  • Preheat your oven to 180C (160C fan-forced) and line 2 large baking trays with baking paper.
  • Lay the skateboard template on top of the cookie dough and cut around it with a small sharp knife. Keep repeating the process, reusing any excess dough to create a total of 16 cookies.
  • Gently transfer cookies to trays using an egg lifter. Bake for 10 to 12 minutes, rotating trays halfway through. Let cool on trays for 10 minutes, then transfer to wire rack to cool completely.
  • Cut the licorice into 11cm lengths and then into thin strips. Divide the icing into 3 bowls and tint them blue, green, and yellow. Spread the cookies with icing and place 1 or 2 pieces of licorice down the center of each cookie, following the picture as a guide. Spread a little icing on 1 side of each of the 4 Life Savers and place them on the sides of the cookies to create wheels. Repeat with the remaining Life Savers, icing, and cookies. Allow to set for 20 minutes before serving.
  • For Royal icing: Put egg whites in a medium bowl. Mix in icing sugar slowly, whisking until smooth and well blended.
