"One-pan dinner with juicy chicken thighs, sweet plum tomatoes, and hearty potatoes."
Ingredients:
  • 1.5 pounds boneless, skinless chicken thighs, trimmed of fat
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon olive oil
  • 1 onion, thinly sliced
  • 1 garlic clove, chopped
  • 1 large potato, peeled and cubed
  • 3 plum tomatoes, chopped
  • 0.75 cup chicken broth
  • 0.5 cup chopped fresh basil
Instructions:
  • Season both sides of the chicken thighs generously with a pinch of salt and pepper. In a large nonstick skillet over medium-high heat, heat up a drizzle of olive oil until shimmering. Sear the chicken thighs until golden brown, approximately 5 minutes per side. Add in diced onion and minced garlic, sautéing until the onion is tender, around 5 minutes.
  • Combine the potatoes, tomatoes, and chicken broth in the skillet. Cover, lower the heat, and let it simmer for about 20 minutes until the chicken is cooked through and the potato is tender. Remove from heat and gently fold in the fresh basil.
