One-skillet chicken with bacon mashed potatoes cooked in flavorful bacon grease.
Ingredients:
  • 6 slices bacon
  • 1.5 pounds skinless, boneless chicken breast halves
  • 1.5 pounds potatoes, peeled and diced
  • 2 tablespoons butter
  • 0.25 cup milk
  • 0.5 teaspoon Italian seasoning
  • 1.5 tablespoons all-purpose flour
Instructions:
  • In a large, deep-sided skillet over medium heat, cook the bacon until crispy, turning occasionally, for about 10 minutes. Drain the bacon on paper towels and crumble once cooled. Keep the flavorful bacon grease in the skillet.
  • Season chicken with a pinch of salt and pepper. Sear in bacon grease over medium heat until golden brown and fully cooked, approximately 5 minutes per side. Check the temperature with a thermometer - it should reach 165 degrees F (74 degrees C). Transfer chicken to a plate.
  • Fry the potatoes in the skillet until fork-tender for about 15 minutes. Transfer them to a bowl using a slotted spoon and mash. Mix in butter until combined, then pour in milk and continue mashing until smooth. Stir in crumbled bacon and season with Italian seasoning, salt, and pepper.
  • Stir in the flour with the oil in the skillet to create a roux. Gradually pour in chicken broth while whisking until a slightly thinner than gravy sauce forms. Let simmer until thickened, for about 1 minute. Season with salt and pepper, then remove from heat.
  • Pour the delicious gravy over the tender chicken and fluffy potatoes for an irresistible finishing touch.
