Creamy mustard chicken with garlic mash

Indulge in a delicious pub-style dish of pan-fried chicken in creamy sauce, served with mashed potatoes and green beans.
Ingredients:
  • 800g desiree potatoes, peeled, coarsely chopped
  • 4 (about 150g each) single chicken breast fillets
  • 200ml chicken style liquid stock
  • 35.10 gm Wholegrain Mustard
  • 80ml (1/3 cup) thickened cream
  • 150ml milk
  • Steamed green beans, to serve
  • Salt, to season
Instructions:
  • Preheat oven to 200°C. Boil the potato in a large saucepan of water until tender, about 12 minutes. Drain and return to the pan.
  • Heat oil in a non-stick frying pan over high heat. Sear chicken for 2-3 minutes per side, then transfer to a baking tray and bake for 10 minutes until fully cooked.
  • 1. Preheat the frying pan over medium heat until hot. Pour in the stock and stir for 2-3 minutes. Add the mustard and cream, stirring well. Simmer for 2 minutes until the sauce thickens. Season with salt and pepper to taste.
  • In a saucepan over medium heat, gently heat the milk and garlic until almost boiling. Pour this mixture over the potatoes and mash until smooth. Season with salt and pepper to taste.
  • Plate the mashed potatoes, chicken, and sauce separately on serving plates. Accompany with a side of beans.
