One-skillet gnocchi supper with greens, tomatoes, white beans, melted mozzarella.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 1 (16 ounce) package shelf-stable gnocchi (see Tip)
  • 1 teaspoon extra-virgin olive oil
  • 1 medium yellow onion, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups chopped chard leaves or spinach
  • 1 (15 ounce) can diced tomatoes with Italian seasonings
  • 1 (15 ounce) can white beans, rinsed
  • 0.25 teaspoon freshly ground pepper
  • 0.5 cup shredded part-skim mozzarella cheese
  • 0.25 cup finely shredded Parmesan cheese
Instructions:
  • In a large nonstick skillet over medium heat, warm 1 tablespoon of oil. Cook the gnocchi, stirring frequently, until they are plumped and beginning to brown, for 5 to 7 minutes. Transfer to a bowl.
  • Drizzle the last teaspoon of oil into the pan along with the onion. Cook over medium heat, stirring, for 2 minutes. Then, mix in garlic and water. Cover and simmer until the onion is tender, about 4 to 6 minutes. Toss in the chard (or spinach) and cook until slightly wilted, around 1 to 2 minutes. Add tomatoes, beans, and pepper; bring to a gentle simmer. Finally, fold in the gnocchi and top with mozzarella and Parmesan cheese. Cover and cook until the cheeses are melted and the sauce is bubbly, approximately 3 minutes.
