Cheesy one-skillet dinner made easy with frozen meatballs, skipping the drive-thru.
Ingredients:
  • 2 tablespoons butter
  • 1 package (16 oz) potato gnocchi
  • 1/2 cup chopped onion
  • 32 (1-inch) frozen beef meatballs, thawed (from 22-oz bag)
  • 1 cup Progresso™ beef flavored broth (from 32-oz container)
  • 1 can (14.5 oz) Muir Glen™ organic diced fire roasted tomatoes, drained
  • 1 cup shredded sharp Cheddar cheese (4 oz)
  • 3/4 cup coarsely chopped cooked bacon
  • 2 tablespoons sliced green onions
  • 2 tablespoons chopped dill pickles
Instructions:
  • In a spacious nonstick skillet, melt 1 tablespoon of butter over medium-high heat. Add the gnocchi and cook for 4 to 6 minutes, stirring occasionally, until golden brown. Transfer the gnocchi to a plate and set aside.
  • Lower the heat to medium and melt the remaining 1 tablespoon of butter in the skillet. Add the onion and meatballs, cooking for 4 to 6 minutes while stirring occasionally until the onions are tender and the meatballs are heated through. Next, add the broth, tomatoes, and gnocchi to the skillet. Bring it to a boil, then cover and reduce the heat to medium-low. Let simmer for 3 to 5 minutes until the gnocchi is tender. Finally, turn off the heat.
  • Sprinkle shredded cheese over the gnocchi and meatballs, then cover and allow to rest for 5 minutes. Before serving, garnish with bacon, green onions, and pickles.
