Elevate your BBQ with a mouthwatering bacon-stuffed cheeseburger.
Ingredients:
  • 12 slices sharp cheddar cheese
  • 15 slices bacon, divided
  • 2 pounds ground chuck (80/20 lean to fat ratio)
  • 1/4 sweet onion, diced
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly cracked pepper
  • 6 Brioche hamburger buns
Instructions:
  • Heat the grill: Preheat the grill for 2-zone grilling by creating a hot side and a cooler side. For a gas grill, keep one burner off, and for a charcoal grill, leave one side without lit coals. Aim for a temperature between 350°F to 450°F for cooking the bacon, which can be increased later for the burgers. Let the grill heat up for 10 to 15 minutes before cooking.
  • For the cheese, stack two slices at a 45-degree angle to ensure even melting over the burger. Set aside. Chop 3 slices of bacon. In a large bowl, gently mix ground chuck, chopped bacon, onion, and Worcestershire sauce using only your fingertips. Avoid overworking the meat for juicier burgers.
  • Shape the patties: Divide the meat mixture into 6 equal portions, aiming for about 5.3 ounces each. Shape each portion into a patty roughly 3 1/2 inches in diameter. Season both sides with salt and pepper. Create an indentation in the center of each patty to prevent swelling. Chill the patties while you cook the bacon.
  • Grill the bacon until desired doneness: Cook all 12 slices of bacon on the grill over direct heat for 4 to 6 minutes, flipping halfway. Adjust grilling time for preferred crispiness. Place grilled bacon on a wire rack, tent loosely with foil over paper towel.
  • Adjust the grill to increase the direct heat side to 400°F to 500°F while maintaining the two-zone grilling setup. Aim for a higher temperature to cook the burgers faster than the bacon.
  • Grill the burgers and melt the cheese: Grill the patties over direct heat, flipping once halfway through cooking, until they reach an internal temperature of 155°F, about 9 to 11 minutes. Achieve a medium-well doneness with a nice crust and grill marks. Add cheese slices on each patty during the final minute of grilling. Rest the burgers on a sheet tray covered with foil while you toast the burger buns.
  • Char the buns: Place the buns cut side down on the grill over high heat for about 30 seconds to 1 minute until grill marks appear.
  • Construct the burgers: Start by laying a burger on each bottom bun. Add two folded slices of bacon on top of each burger. Finish by placing the top bun and serve with your preferred condiments.
