Make a delicious skillet Mexican street corn with classic elote flavors - quick and easy!
Ingredients:
  • 2 tablespoons olive oil
  • 2 (16 ounce) packages frozen corn
  • 0.25 cup crumbled cotija cheese
  • 0.25 cup minced red onion
  • 2 tablespoons finely chopped cilantro
  • 3 tablespoons mayonnaise
  • 2 tablespoons lime juice
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon smoked sweet paprika
  • 0.25 teaspoon chili powder
  • 1 pinch ground coriander
Instructions:
  • Preheat a 14-inch skillet over medium-high heat, then add olive oil and swirl to coat. Spread frozen corn in a single layer and cook undisturbed for about 8 minutes.
  • In a large bowl, mix together mayonnaise, sour cream, lime juice, cumin, paprika, chili powder, salt, and coriander. Set aside.
  • Ensure the corn is slightly charred. If not, cook for an additional 4 minutes, stirring as needed.
  • After the corn is perfectly browned/chard, transfer it to the bowl of dressing and toss gently. Mix in cotija cheese, red onion, and cilantro until fully combined. Serve promptly.
