Skillet Elote (Mexican Street Corn)

Skillet version of tasty Mexican street corn (elote) for when grilling isn't available.
Ingredients:
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1.5 teaspoons chili powder
  • 4 ears sweet corn, shucked and kernels cut off
  • 0.25 cup chopped cilantro
  • 3 tablespoons cotija cheese
Instructions:
  • Combine mayonnaise, lime juice, and chili powder in a bowl, whisk until well mixed. Set aside.
  • Preheat a large cast iron skillet over medium-high heat. Add corn and let it cook untouched for 5 minutes. Stir occasionally with a spatula until corn is lightly browned, about 3 more minutes. Remove from heat.
  • Combine reserved creamy mayonnaise mixture with the dish and mix well. Incorporate cilantro, then plate the dish and garnish generously with cotija cheese.
