Skillet-roasted pork tenderloin with apples and onions: Easy, flavorful meal for busy nights.
Ingredients:
  • 2 (1 1/2 pound) pork tenderloins
  • 2 teaspoons vegetable oil
  • 1 teaspoon sea salt
  • 2 tablespoons vegetable oil, divided, or more as needed
  • 3 medium Granny Smith apples - peeled, cored, and sliced into eighths
  • 2 medium sweet onions, sliced vertically
  • 3 teaspoons chopped fresh thyme, divided
  • 0.25 teaspoon ground black pepper, or to taste
  • 1 tablespoon Dijon mustard
  • 1 cup chicken stock
Instructions:
  • Preheat the oven to 425°F (220°C) for ultimate baking perfection.
  • Remove the silver skin from the pork tenderloins and pat them dry with paper towels. Massage the tenderloins with 2 teaspoons of vegetable oil and then season them with sea salt.
  • Heat vegetable oil until it shimmers in a large, oven-proof skillet over medium heat. Brown tenderloins on all sides for about 10 minutes, then transfer to a large plate.
  • Pour the remaining tablespoon of vegetable oil into the skillet with the drippings. Cook the apples and onions, stirring occasionally, until the onions become translucent, which should take about 5 minutes. If the skillet seems dry, feel free to add more oil. Season with 1 teaspoon of thyme and black pepper, stirring gently to combine. Take the skillet off the heat.
  • Evenly coat the tenderloins with Dijon mustard using a pastry brush. Sprinkle 2 remaining teaspoons of thyme on top. Place the tenderloins into the skillet with the apple mixture.
  • Roast uncovered in the preheated oven until the tenderloin reaches 145°F (63°C), approximately 15 minutes. Take the skillet out, transfer the pork to a platter, cover with foil, and let it rest.
  • While your chicken stock simmers in a saucepan until reduced by half (8 to 10 minutes), combine it with the apple mixture in the skillet. Bring the mixture to a boil over medium-high heat (about 5 minutes) and stir in the butter until melted.
  • Slice the succulent pork and elegantly present it atop the delectable apple mixture.
