Tender pork loin glazed with apple jelly, balsamic vinegar, baked with wine-infused onions and apples.
Ingredients:
  • 1 tablespoon olive oil
  • 1 (1 1/4 pound) pork tenderloin
  • kosher salt and ground black pepper to taste
  • 2 teaspoons chopped fresh parsley
  • 0.5 sweet onion, diced
  • 1 Gala apple, cut into chunks
  • 0.5 cup Riesling wine
  • 1 cup apple jelly
  • 2 tablespoons balsamic vinegar
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) while generously greasing a spacious baking dish for the tenderloin without any need for folding.
  • In a large skillet over medium-high heat, sizzle the pork tenderloin in olive oil until beautifully browned. Transfer the seared meat to a baking dish and liberally season all sides with salt, pepper, and parsley.
  • In a skillet over medium heat, sauté onion and apple until onion softens, about 5 minutes. Add Riesling wine, deglaze the skillet, and bring to a boil. Pour the flavorful mixture over the tenderloin.
  • Combine apple jelly and balsamic vinegar until the mixture is silky and lump-free. Coat pork thoroughly with the jelly mixture.
  • Roast pork loin in a hot oven until a thermometer reads 145°F (63°C), for 30 to 45 minutes. Rest for 10 minutes, slice, and serve with apple-onion mixture.
