Low-calorie, low-sodium alternative to a classic pasta dish, featuring quick and easy frozen asparagus cuts. Simply microwave asparagus while cooking pasta, then combine for a delicious meal.
Ingredients:
  • 1 pound fresh asparagus spears
  • 8 ounces dried multigrain linguine pasta
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon freshly ground black pepper
  • 1 package (8 oz) fresh button mushrooms, halved
  • 1/4 cup dry white wine
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1/4 cup shredded fresh basil
  • 1/4 teaspoon crushed red pepper
Instructions:
  • Prepare the fresh asparagus by snapping off and removing the woody bases. Rinse them, then bias-slice into 1 1/2-inch pieces; set aside.
  • Prepare the pasta as instructed on the package. In a large skillet over medium heat, warm the oil. Add the garlic and black pepper, and sauté for 30 seconds, stirring constantly.
  • Place the asparagus, mushrooms, wine, and salt in a skillet. Bring to a boil, then lower the heat and cook uncovered for 4 minutes, or until the asparagus is crisp-tender, stirring occasionally. Take the skillet off the heat and stir in the butter.
  • After draining the pasta, gently combine it with the vegetables in the skillet. Garnish with fresh basil and crushed red pepper for added flavor.
