Lighter French Onion Soup with significantly less fat, calories, and saturated fat compared to the original recipe. Luxuriously savory and irresistible.
Ingredients:
  • 1 tablespoon olive or canola oil
  • 4 medium onions (about 1 1/2 lb), sliced (8 cups)
  • 1 carton (32 oz) reduced-sodium beef broth (4 cups)
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper
  • 1 dried bay leaf
  • 2 teaspoons reduced-sodium soy sauce
  • 8 slices (1/2 inch thick) baguette French bread
  • 1/4 cup shredded fresh Parmesan cheese (1 oz)
Instructions:
  • In a 4-quart nonstick Dutch oven, heat oil over medium heat. Add onions and cook uncovered for 10 minutes, stirring frequently. Then, reduce the heat to medium-low and continue cooking for 35 to 40 minutes, stirring frequently, until the onions are a light golden brown and have shrunk during cooking.
  • Combine the broth, thyme, pepper, bay leaf, and soy sauce in the pot. Bring to a boil, then lower the heat, cover, and let it simmer for 15 minutes. Don't forget to remove the bay leaf before serving.
  • Preheat the oven to broil. Arrange baguette slices on a baking sheet. Sprinkle cheese evenly over the slices. Broil 4 to 6 inches away from the heat for 30 to 60 seconds, or until the cheese is melted. Keep a close eye to prevent burning.
  • Pour the soup into bowls and accompany with baguette slices.
