Create easy, wholesome baked French toast with soymilk, egg substitute, and wheat germ.
Ingredients:
  • 1 cup vanilla soymilk
  • 1 1/2 cups fat-free egg product
  • 1 teaspoon pumpkin pie spice or ground cinnamon
  • 12 slices French bread (3 1/2x2 1/4x1 inch)
  • 1/4 cup wheat germ
  • Syrup or fresh fruit, if desired
Instructions:
  • Preheat the oven to 450°F and generously coat a 15x10x1-inch pan with cooking spray.
  • In a large bowl, whisk together soymilk, egg product, and pumpkin pie spice until foamy. Soak each side of bread in the egg mixture for 1 minute, then place in a single layer in a pan. Drizzle any extra egg mixture over the bread and sprinkle wheat germ evenly on both sides of the bread.
  • Bake for 10 minutes until bottoms are golden brown, then turn and bake for an additional 6 to 8 minutes until bottoms are golden brown. Serve with syrup or fruit.
