Skinny Key Lime Pie Bars

Light and refreshing dessert with cherry or orange gelatin option. Low fat and low sodium alternative to original recipe.
Ingredients:
  • 6 squares low-fat honey graham crackers, finely crushed (1/2 cup)
  • 2 tablespoons butter, melted
  • 1 teaspoon sugar
  • 1 package (4-serving size) sugar-free lime-flavor gelatin
  • 3/4 cup boiling water
  • 1 container (16 oz) fat-free cottage cheese
  • 1 package (8 oz) fat-free cream cheese, softened
  • 1 container (8 oz) frozen fat-free whipped dessert topping, thawed
  • Key limes or limes, cut in wedges (optional)
Instructions:
  • Mix crushed graham crackers, butter, and sugar in a small bowl. Press the crumb mixture into the bottom of a 2-quart square baking dish and chill while making the filling.
  • Combine gelatin with boiling water in a large bowl, stirring until gelatin dissolves. Set aside.
  • Blend cottage cheese and cream cheese in a food processor until smooth, occasionally scraping the sides. Mix 1/2 cup of the cottage cheese blend into the gelatin, then combine the rest until smooth. Gently fold in the whipped dessert topping, then spread over the chilled crumb base.
  • Chill in the fridge for 8 to 24 hours until the filling sets. When ready to serve, slice into squares and garnish with lime wedges, if preferred.
