Light and satisfying breakfast option with significantly fewer calories and saturated fat.
Ingredients:
  • Nonstick cooking spray
  • 1 egg, lightly beaten
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 3 tablespoons fat-free milk
  • Dash salt
  • 2 tablespoons sugar-free orange marmalade
  • 2/3 cup sliced fresh fruit (such as strawberries, peeled kiwifruit, nectarines, pears, and/or peaches)
Instructions:
  • Preheat your oven to 400°F. Gently spray two 4 1/2 inch individual pie plates, 10-ounce custard cups, or 10-ounce au gratin dishes with nonstick cooking spray and set them aside.
  • Mix egg, flour, milk, and salt in a small bowl until smooth. Pour batter into baking dishes and bake for 15 to 20 minutes, until pancakes are puffed and golden brown.
  • Place the orange marmalade in a small microwave-safe dish and microwave on high for about 30 seconds until melted.
  • Serve the puffed pancakes topped with fruit and drizzle melted marmalade over the top. Enjoy warm.
