Lighter Mac and Cheese: A healthier twist with significantly less fat, saturated fat, and calories compared to the original recipe. A must-try version of the classic comfort dish!
Ingredients:
  • 2 cups uncooked regular or whole wheat elbow macaroni (8 oz)
  • 2 cups fat-free (skim) milk
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground red pepper (cayenne)
  • 2 cups shredded reduced-fat sharp Cheddar cheese (8 oz)
Instructions:
  • Cook the macaroni according to package instructions in a 3-quart saucepan. Drain and return to the saucepan, covering to keep warm.
  • Preheat the oven to 350°F. Coat an 8-inch square glass baking dish with cooking spray. In a saucepan, whisk together milk, flour, mustard, salt, black pepper, and red pepper until smooth. Cook over medium heat, stirring constantly, until the mixture boils and thickens. Remove from heat and stir in cheese until melted.
  • Combine the creamy cheese sauce with the cooked macaroni, ensuring each piece is coated in deliciousness. Transfer the mixture into a baking dish.
  • Bake for 20-25 minutes until edges are bubbling.
