Skinny Mediterranean Beef Pita Pizzas

Healthier mini pizzas made with fresh ingredients, using pita rounds for easy prep. Infused with big flavors, lower in saturated fat and sodium.
Ingredients:
  • 6 ounces lean ground beef or lamb
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 8-ounce can Muir Glen™ tomato sauce
  • 1 teaspoon snipped fresh rosemary or 1/4 teaspoon dried rosemary, crushed
  • 2 6-inch whole wheat pita bread rounds
  • 1/2 cup shredded reduced-fat mozzarella cheese (2 ounces)
  • 1/2 cup shredded fresh spinach
  • 1 medium tomato, chopped
  • 1/4 cup crumbled reduced-fat feta cheese (1 ounce)
  • 12 pitted kalamata or ripe olives, quartered
Instructions:
  • 1. Preheat your oven to a toasty 400°F. In a nonstick skillet over medium heat, brown the ground beef with onions and garlic until cooked through; then, drain off any excess fat. Add in tomato sauce and rosemary to the skillet, bring to a boil, and then let it simmer uncovered for 2 minutes.
  • Split pita bread rounds in half horizontally and place rough sides up on a large baking sheet. Bake for 3 to 4 minutes until lightly toasted.
  • Assemble the meat mixture on toasted pita bread, then generously sprinkle with melty mozzarella. Bake for an additional 2 to 3 minutes until the cheese is gooey. Take out from the oven and layer with fresh spinach, ripe tomato, tangy feta cheese, and briny olives. Serve promptly to enjoy all the flavors at their best.
