Healthier, whole wheat flour cookie with natural sweetness, 25% fewer calories and 33% less saturated fat than the original recipe.
Ingredients:
  • 3/4 cup no-trans-fat 68% vegetable oil spread stick, softened
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/3 cup buttermilk
  • 2 egg whites
  • 2 teaspoons vanilla
  • 2 cups Gold Medal™ whole wheat flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 1 cup raisins
  • 1/3 cup chopped pecans or walnuts, toasted
Instructions:
  • Preheat oven to 350°F and lightly grease or spray cookie sheets. In a large bowl, use an electric mixer on low speed to cream vegetable oil spread and sugars until creamy. Mix in buttermilk, egg whites, and vanilla until well combined.
  • Mix flour, cinnamon, baking soda, and salt on low speed until well combined. Fold in oats, raisins, and pecans. Scoop dough onto cookie sheets, spacing 2 inches apart, and gently flatten each.
  • Bake for 11 to 13 minutes until lightly golden brown and set. Allow to cool for 1 minute before transferring to a cooling rack. Once completely cooled, store in an airtight container.
