Skinny Quick Chicken Bread Salad

Healthier twist on classic panzanella salad with added chicken for a satisfying main course.
Ingredients:
  • 1 can (14.5 oz) diced tomatoes with garlic and onion, undrained
  • 4 small roasted or grilled bone-in chicken breasts
  • 4 cups cubed Italian bread
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 medium cucumbers, halved lengthwise and sliced
  • 2 cups torn fresh spinach and/or basil
Instructions:
  • Create a flavorful dressing by mixing 2 tablespoons of tomato liquid from diced tomatoes with 1 tablespoon of olive oil in a small bowl; set aside.
  • Take the succulent roasted chicken and gracefully separate the tender meat from the bones. Proceed by elegantly slicing the meat into delectable pieces.
  • Heat the last 1 tablespoon of oil in a skillet over medium heat. Add bread cubes, salt, and pepper, stirring until golden for about 5 minutes. Remove from heat, then mix in diced tomatoes. Divide the bread mixture among four plates, and top with cucumbers, chicken, and spinach. Serve with dressing.
