Healthier coffee cake made with canola oil and whole wheat flour for guilt-free indulgence.
Ingredients:
  • 2 tablespoons Gold Medal™ whole wheat flour
  • 1/3 cup chopped pecans, toasted*
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon canola oil
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 cup Gold Medal™ whole wheat flour
  • 3/4 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1 egg white
  • 3/4 cup fat-free sour cream
  • 1/4 cup canola oil
Instructions:
  • Preheat the oven to 350°F. Grease the bottom of a 9-inch square pan with cooking spray. Combine streusel ingredients in a small bowl using a fork until crumbly; set aside.
  • Combine flours, 3/4 cup brown sugar, baking powder, baking soda, and salt in a large bowl. Mix in the rest of the coffee cake ingredients until fully incorporated.
  • Layer half of the batter in the pan, ensuring it is evenly spread. Sprinkle half a cup of the streusel evenly over the batter. Drop spoonfuls of the remaining batter over the streusel, then spread carefully. Finish by sprinkling the remaining streusel over the top.
  • Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean. Allow to cool for about 1 hour before serving warm.
