Ingredients:
  • 6 ounces dried whole wheat linguine or fettuccine
  • 1 package (12 oz) frozen broccoli florets
  • 1/2 cup Progresso™ reduced-sodium chicken broth (from a 32-oz carton)
  • 2 teaspoons cornstarch
  • 1/4 teaspoon sodium-free lemon-pepper seasoning or black pepper
  • 12 ounces boneless, skinless chicken breasts, cut into bite-size strips
  • 2 teaspoons olive oil or cooking oil
  • 1 tablespoon snipped fresh tarragon or dill, or 1/2 teaspoon dried tarragon or dill, crushed
Instructions:
  • Prepare the pasta and broccoli following the instructions on the packages. Drain the pasta and combine it with the cooked broccoli in the hot pan, cover to retain the heat.
  • Combine flavorful chicken broth, thickening cornstarch, and aromatic seasoning in a small bowl; let it sit for the next step.
  • Cook the chicken in a large nonstick skillet with hot oil for about 4 minutes, stirring frequently, until it is no longer pink.
  • Whisk cornstarch mixture and pour into skillet. Simmer and stir until thick. Add tarragon and cook for an extra 2 minutes. Serve over pasta with broccoli.
