Skinny Tuna and White Bean Wraps

Healthier tuna salad wrap with reduced saturated fat and sodium. Quick and easy brown-bag lunch option.
Ingredients:
  • 1/4 cup finely chopped red onion
  • 2 tablespoons lemon juice
  • 1/8 teaspoon black pepper
  • Dash salt
  • 1 tablespoon olive oil
  • 1 can (15 oz) Progresso™ cannellini beans, rinsed and drained
  • 2 cans (6 oz) very low sodium chunk white tuna, drained
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup snipped fresh parsley
  • 4 8-inch whole wheat flour tortillas
  • 1/2 cup julienned carrot
Instructions:
  • Combine the red onion, lemon juice, pepper, and salt in a small bowl, then whisk in the olive oil. Set the dressing aside.
  • In a spacious bowl, gently crush the beans. Mix in the tuna, tomatoes, and parsley. Drizzle the dressing over the bean mixture and stir softly.
  • Spread bean mixture evenly onto tortillas. Sprinkle with carrot. Roll up tightly. Enjoy right away or refrigerate for up to 6 hours.
