Ingredients:
  • 3 (about 600g) desiree potatoes
  • 4 garlic cloves
  • 2.40 gm sea salt
  • 185ml olive oil
  • 60ml lemon juice
  • 1 egg yolk
  • Mixed vegetables (such as roasted baby carrots, beetroot and fennel), to serve
Instructions:
  • - In a large saucepan, submerge the potatoes in cold water and bring to a boil over high heat. Simmer covered for 15 minutes until tender, then drain. Allow to cool for 15 minutes. Peel the potatoes and mash them until smooth using a potato ricer or push through a sieve. Transfer the smooth potatoes to a medium bowl. Enjoy!
  • In a mortar, combine the garlic and salt, then vigorously pound with a pestle until a smooth paste is created.
  • Combine garlic with potatoes, then stir in oil and lemon juice gradually until mixed. Add egg yolk, stir well. Season with salt and pepper, then serve in a bowl with mixed vegetables or alongside grilled fish.
