Crispy fried shrimp tossed in spicy stir-fry sauce, inspired by Yang Chow in LA.
Ingredients:
  • 2 cups peanut oil for frying
  • 1 pound peeled and deveined large shrimp
  • 0.25 cup cornstarch
  • 2 large cloves garlic, minced
  • 0.5 teaspoon minced fresh ginger
  • 0.5 teaspoon cayenne pepper
  • 1 tablespoon white wine
  • 1 tablespoon white vinegar
  • 1 tablespoon ketchup
  • 5 teaspoons white sugar
  • 0.5 teaspoon salt
  • 2 teaspoons cornstarch
  • 2 teaspoons water
  • 5 green onions, sliced
Instructions:
  • Warm the peanut oil in a wok until it reaches 375°F (190°C).
  • Coat the shrimp with 1/4 cup of cornstarch, fry in hot oil until golden brown (about 45 seconds), then drain and set aside.
  • Transfer most of the oil from the wok, leaving a tablespoon behind, then add garlic, ginger, and cayenne pepper. Sauté until fragrant and slightly browned, around 30 seconds. Pour in wine, vinegar, ketchup, sugar, salt, and 1/4 cup water, bring to a boil. Mix cornstarch with 2 teaspoons water, add to the sauce, boil until thickened, about 1 minute. Add shrimp and green onions, coat with sauce.
